Chia Seeds

Chia Seeds reportedly date back to the Aztecs where they were grown as a food crop,  and served as a stable food source. It has become popular today and is used as a health food in cereals, health food bars, smoothies, in tortillas and many other ways. The seeds are packed with vitamins and goodness including a high carbohydrate content. These seeds are hydrophilic (attracted to water molecules), they can absorb up to 12 times their weight in liquid, creating a gel coating that is useful in molecular gastronomy.
