Arrowroot

Arrowroot is a dried and powdered start of in particular the cassava plant or tapioca. The powder is used for a number of culinary uses though predominantly as a thickening agent for soups, sauces, and stews. It is also used in ice creams making to prevent the formation of ice crystals, for a smoother iced product.
