Asparagus & Prosciutto Fritti

10 Asparagus Spears, trimmed
10 Prosciutto or Jamon , slices
150g Potato Starch
3 Lemons, wedged
Method
Wrap each spear with a slice of prosciutto, and set aside.
In a mixing bowl add the starch, and enough water to make a batter consistency.
Dip each spear into the batter then into a pan of hot olive oil, and shallow fry till golden brown, evenly.
Remove from the oil and allow to drain on some absorbent kitchen paper.
Serve together with a slice of lemon.
