Chinois is the French word for a conical strainer or sieve, which means Chinese (relating to the shape of the strainer being similar to that of the traditional Chinese workers hat). They come in a variety of sizes with vary degrees of fine mesh suitable for a variety of uses, such as straining sauces, soups, purees and custards.
