Dijon Mustard

Dijon Mustard has been named after the town of Dijon in Burgundy France. It is unique in that the traditional vinegar was substituted for Verjuice in 1856 by  Jean Naigeon. Though today it is more common that the verjuice has been replaced by white wine.
