Paella – is a rice based dish originating from the region of Valencia, comprising of chicken, seafood and vegetables. Paella differs from other rice dishes such as risotto in the seasonings it uses and the toasted rice layer on the base of the pan. The pan is traditionally flat, large, although there are a selection of sizes, with sides and handles for lifting.
