Trimoline

Trimoline is classed as an invert sugar ( splitting of sucrose into fructose and glucose) and is used by bakers as it holds more moisture and does not crystallize as easily as sucrose alone. It is easy enough to make an invert or inverted sugar, all you need is to heat up sucrose, with water and some lemon juice or cream of tartar.
