In the center of a pita, spread some hummus, from one side to the other.
Add some of the Tabbouleh salad, & some roquette.
Wrap up in a tight roll, place a toothpick every 5cm.
Cut in between each toothpick, & lay the pinwheels on a platter to serve.
Drain the burgle, and place in a large mixing bowl together with parsley, tomatoes, and spring onions, and mix together.
Add the lemon juice, oil and seasoning to taste.
