Arabian Pinwheels


  • 5        Pita Bread Slices
  • 250g Tabbouleh salad
  • 250g Hummus
  •           Rocket Lettuce
  •           Salt & Pepper
Tabbouleh Salad
  • 200g Burgle, soaked.
  • 1b      Parsley, chopped.
  • 2        Tomatoes, seeds removed, chopped.
  • 1b      Spring Onion, cleaned, chopped.
  • 1         Lemon, juice.
  •            Olive Oil
  •            Salt & Pepper


  • In the center of a pita, spread some hummus, from one side to the other.

  • Add some of the Tabbouleh salad, & some roquette.

  • Wrap up in a tight roll, place a toothpick every 5cm.

  • Cut in between each toothpick, & lay the pinwheels on a platter to serve.

  • Drain the burgle, and place in a large mixing bowl together with parsley, tomatoes, and spring onions, and mix together.

  • Add the lemon juice, oil and seasoning to taste.
