Ingredients
2 Avocado, peeled & mashed
1 Lemon
6 Bread slices
150g Roasted Chicken
30g Mayonnaise
6 Tomato, sliced
½b Chives, chopped
Method
Mix together the avacado & lemon juice to season, reserve to one side.
In a separate bowl mix together the chicken, mayonaise, and chives.
Remove the crusts from the bread.
Roll each bread slice out thin, with a rolling pin.
Spread, the avacado over one surface of each slice.
Roll each slice, with the avacado on the inside, into a roulade, then slice.
Line the inside of a mould with plastic wrap, then with the slices of roulade.
Fill the inside of the mould with the chicken mixture, & top with tomato.
Compact down, then turn out and remove the plastic wrap.
