Avo & Chick Royal


  • 2        Avocado, peeled & mashed
  • 1        Lemon
  • 6       Bread slices
  • 150g Roasted Chicken
  • 30g   Mayonnaise
  • 6       Tomato, sliced
  • ½b   Chives, chopped


  • Mix together the avacado & lemon juice to season, reserve to one side.
  • In a separate bowl mix together the chicken, mayonaise, and chives.
  • Remove the crusts from the bread.
  • Roll each bread slice out thin, with a rolling pin.
  • Spread, the avacado over one surface of each slice.
  • Roll each slice, with the avacado on the inside, into a roulade, then slice.
  • Line the inside of a mould with plastic wrap, then with the slices of roulade.
  • Fill the inside of the mould with the chicken mixture, & top with tomato.
  • Compact down, then turn out and remove the plastic wrap.
