750gm             Potatoes, (Dutch Cream, Nicola, Mona Lisa) peeled & diced

120gm             Flour, strong

80gm               Butter

4                      Egg Yolks

                        Sea Salt


  • Please ensure you Wash your Hands!
  • Boil the potatoes in a pot of water, with a little salt until cooked.
  • Drain, and allow to dry out for several minutes.
  • Pass through a mouli, or a ricer, and then through a sieve if needed.
  • Add the butter, flour, & eggs to the hot potato mixture, now mix together thoroughly.
  • Roll out the paste into balls & either mark with the back of a fork or with a gnocchi paddle.
  • Poach the gnocchi in boiling water for 6-8 minutes.
