Whisk together the milk, a drop of oil, & egg, please no shell!
Add a pinch of salt, the flour, and stir, you will end up with a thick batter, cover and let it rest for 30 minutes in the refrigerator.
Adjust with a little milk if too thick, and mix through, then add the banana mash.
Heat a non –stick pan, wipe with a smear of oil, then add enough batter to thinly coat the bottom of the pan. Move the pan around to allow the batter to reach all sides of the pan.
Allow to cook for a few minutes on one side before turning to the other side, for the same time.
