• 2            Bananas, peeled & mashed
  • 1cup      Plain Flour or Spelt Flour
  • 3/4cup Soy Milk (no added sugar)
  • 1            Egg
  •               Strawberry Sauce
  •               Grapeseed Oil


  • Whisk together the milk, a drop of oil, & egg, please no shell!
  • Add a pinch of salt, the flour, and stir, you will end up with a thick batter, cover and let it rest for 30 minutes in the refrigerator.
  • Adjust with a little milk if too thick, and mix through, then add the banana mash.
  • Heat a non –stick pan, wipe with a smear of oil, then add enough batter to thinly coat the bottom of the pan. Move the pan around to allow the batter to reach all sides of the pan.
  • Allow to cook for a few minutes on one side before turning to the other side, for the same time.
  • Remove and serve with a berry sauce!
