Add the juice and honey together, with a few grains of tartaric acid.
Using an immersion (stick) blender mix the ingredients together on a low speed till well incorporated.
On high speed, bringing the blade of the blender to about 2 cm from the top of the liquid, sheer the liquid for several minutes. The bubbles will create a foam, remove this foam and allow to sit for three to four minutes in which time it will compact further.
