Bruschetta with Peppers & Goats Cheese


  • 5         Sour Dough Bread, slices
  • 2c       Garlic, halved
  • 300g Sweet Peppers
  • 50g    Hot Peppers
  • 250g  Goats Cheese
  •            Olive Oil
  •            Sea Salt


  • Place the peppers in a baking tray, sprinkle with a little olive oil, and cook off in a pre-heated oven at 180c for 25 -30 minutes, or until coloured and soft.
  • Once cooked remove from the oven, allow to cool, remove the skin & clean away the seeds.
  • Slice the peppers into strips, and mix together.
  • Fry off each slice of bread in a frypan with a little olive oil, till golden brown on each side.
  • Rub each surface of the bread with a garlic clove generously.
  • Top with a little of the peppers, then crumble the cheese on top.
  • Drizzle olive oil over the top, season and lightly gratinate in the oven for a few minutes.
