Place the peppers in a baking tray, sprinkle with a little olive oil, and cook off in a pre-heated oven at 180c for 25 -30 minutes, or until coloured and soft.
Once cooked remove from the oven, allow to cool, remove the skin & clean away the seeds.
Slice the peppers into strips, and mix together.
Fry off each slice of bread in a frypan with a little olive oil, till golden brown on each side.
Rub each surface of the bread with a garlic clove generously.
Top with a little of the peppers, then crumble the cheese on top.
Drizzle olive oil over the top, season and lightly gratinate in the oven for a few minutes.
