2 Eggs
25g Spinach leaves, washed
2 Bacon rashers (slices), cured and smoked
Butter
Olive Oil
Cream, double
Salt
Method
Heat a pan, medium heat, and add a splash of oil.
Break the eggs into a deep container, inspect for any shell, then add the spinach, and blend with an immersion (stick) blender
Once the butter is bubbling, add the bacon allowing to cook for several minutes on each side, remove to a plate.
Add a knob of butter to the pan, and once bubbling add the egg.
Mix continuously, to assist in the cooking process, which should only take a minute or two.
The egg mixture should not be dry but still wet, remove from the heat.
Stir through a dollop of the cream, season, and serve with the bacon.
Remember the eggs still have sufficient heat in them, and they will continue to cook, without a heat source provided.
