Green Eggs & Ham


  • 2     Eggs
  • 25g Spinach leaves, washed
  • 2     Bacon rashers (slices), cured and smoked
  •        Butter
  •        Olive Oil
  •        Cream, double
  •        Salt


  • Heat a pan, medium heat, and add a splash of oil.
  • Break the eggs into a deep container, inspect for any shell, then add the spinach, and blend with an immersion (stick) blender
  • Once the butter is bubbling, add the bacon allowing to cook for several minutes on each side, remove to a plate.
  • Add a knob of butter to the pan, and once bubbling add the egg.
  • Mix continuously, to assist in the cooking process, which should only take a minute or two.
  • The egg mixture should not be dry but still wet, remove from the heat.
  • Stir through a dollop of the cream, season, and serve with the bacon.
  • Remember the eggs still have sufficient heat in them, and they will continue to cook, without a heat source provided.
