6 Slices Bread, light Rye, Whole meal, seeded
200 gm Pumpkin, diced & roasted
60 gm Ricotta Cheese
1 Cucumber, sliced fine
4 Cherry Tomatoes, sliced
Salt & Pepper
Method
Mix together the pumpkin & ricotta, season to taste.
On a slice of bread add enough of the mixture to cover, evenly, about ½ cm thick.
Top with a layer of cucumber, then close with another slice of bread.
Ensure the filling is evenly distributed within the sandwich, press down firmly, do not squash.
Cut off the crusts, then slice the sandwich in even square quarters.
Place a slice of tomato on each square, and skewer with a toothpick.
