Pumpkin & Cheese Mini’s


  • 6 Slices                        Bread, light Rye, Whole meal, seeded
  • 200 gm            Pumpkin, diced & roasted
  • 60 gm              Ricotta Cheese
  • 1                      Cucumber, sliced fine
  • 4                      Cherry Tomatoes, sliced
  •                         Salt & Pepper


  • Mix together the pumpkin & ricotta, season to taste.
  • On a slice of bread add enough of the mixture to cover, evenly, about ½ cm thick.
  • Top with a layer of cucumber, then close with another slice of bread.
  • Ensure the filling is evenly distributed within the sandwich, press down firmly, do not squash.
  • Cut off the crusts, then slice the sandwich in even square quarters.
  • Place a slice of tomato on each square, and skewer with a toothpick.
