Lamb Gazamb Burgers – Balmoral C.C.


Lamb Patty - makes 4

250gm    lamb mince

60gm      Meredith Goats cheese plus 1 tbsp oil from jar

50gm      diced semi dried tomatoes

2tsp        chopped mint

1tsp        chopped thyme

Salad ingredients

Pumpkin sliced & roasted in olive oil

Fresh pear sliced

Garden picked baby spinach

Bun ingredients

250gm    wholemeal SR flour

1 tsp        baking powder

1/3cup    water

15gm      butter

2tsp        chopped mint


1/2cup   Polenta

5gm        butter

2tbsp      water


Use store bought whole egg mayonnaise, chopped semi dried tomatoes and chopped mint.


  1. Place lamb mince in a bowl, add crumbled goats cheese, oil, finely diced semi dried tomatoes and chopped herbs into bowl.
  2. mix together and pat out patties onto a lightly floured board then use sheep cutter to make the patty. Alternatively make round burger shaped patties.
  3. Place patties into a hot frypan with a little olive oil to stop them sticking and fry until cooked through.
  4. Place in oven to keep warm.
  5. To make tortilla; rub the butter into the flour until it resembles breadcrumbs. Add chopped mint and baking powder and mix into a dough with the water.
  6. Lightly knead on a chopping board until smooth and then roll out and cut sheep shape with cutter.
  7. Pan fry tortilla's in a lightly greased frypan, until brown and crispy.
  8. For base add polenta into a bowl and rub in butter, then add water and mix. Place onto a chopping board and shape then fry as per tortilla above.
  9. The prepare salad; Slice pumpkin and place on baking paper on a tray, drizzle with olive oil and season to taste. Then roast in hot oven until golden. (approx. 20mins)
  10. To Construct Burger:
  •  Place polenta patty on a plate
  • Add a spoonful of mayonnaise
  • Add lamb patty
  • Then add roast pumpkin, spinach, sliced pear finally place some mayonnaise on the tortilla for top, spread out and place sheep tortilla on top. serve with a toothpick to hold all together.
