In a mixing bowl combine the lemon juice, honey, oil and salt & pepper to taste, this is our dressing.
Take a skewer, and start off with the lettuce poking it at the bottom, and thread it on, followed by a tomato, cheese, mushroom, cucumber, and finally another piece of tomato.
Bend the top of the lettuce leaf over and skewer it at the top.
Before serving drizzle some of the dressing all over the kebob.
