Ingredients

  • 6         Bamboo Skewers
  • 6         Leaves of cos lettuce
  • 6         Cherry tomatoes, cut in half.
  • 1         Cucumber, diced into 1cm cubes
  • 6        Cubes of feta cheese.
  • 3        Button Mushrooms, halved
  • 1        Lemon Juice
  • 1 Ts  Honey
  • 20m Olive oil
  •           Salt & Pepper

Method

  • In a mixing bowl combine the lemon juice, honey, oil and salt & pepper to taste, this is our dressing.
  • Take a skewer, and start off with the lettuce poking it at the bottom, and thread it on, followed by a tomato, cheese, mushroom, cucumber, and finally another piece of tomato.
  • Bend the top of the lettuce leaf over and skewer it at the top.
  • Before serving drizzle some of the dressing all over the kebob.
