Summer Lettuce Wrap


  • 10 leaves         Iceburg lettuce, washed
  • 4                      Tomatoes, sliced
  • 3                      Carrots, peeled & grated
  • 4                      Golden Beets, washed & sliced fine
  • 100 gm            Kidney Beans, drained & mashed
  • 150 gm            Tasty Cheese, grated
  • 250 gm            Humus
  • 1 bnch             Spring Onions, chopped fine


  • Lay a leaf of lettuce onto a plate or board.
  • On top of this add the bean mash, and the carrot.
  • Lay the tomato over this, then add the humus in a few dollops.
  • Top with the beet slices, cheese and spring onions.
  • Roll the wrap up and chomp away happily.
