Wattleseed Damper


  • 850g   Self-Raising Flour
  • 2tbs    Wattleseeds, soaked
  • 20g     Oregano, chopped
  • 5c        Garlic, roasted
  • 1.5tsp Salt
  • 40g     Olive Oil
  • 400m Water


  • Pre-heat the oven to 200c
  • In a large bowl add the flour, seeds oregano, garlic & salt, mix to combine well.
  • Create a well in the middle of the mixture
  • Add the olive oil together with the milk and combine the wet & dry ingredients together to form a dough.
  • Turn the dough onto a floured board and knead till smooth.
  • Cut a cross in the top, brush with a little oilive oil then place on a greased baking tray and place in the oven.
  • Cook for approx. 30 minutes till the outside is golden brown and you can tap the base of the damper and it sounds hollow.
  • Allow to cool prior to serving.
